Adventures in Food: Ever since I posted the English muffins recipe, I have been thinking about making Benedict. I finally made it, but I decided to go with the Italian Scones recipe (posted here) as a base.

For the scones, I used my sprouted whole wheat pastry flour, subbed homemade non-fat Greek-style yogurt for butter, and dried the leftover marinated tomatoes from the Smothered Mediterranean Chicken. Roasted sweet mini peppers and tomato hollandaise. Cocktail from a berry-pom shrub and fizzy water. I used the arils for a garnish like the Tangerine-Pom cocktail posted here.

This was just supposed to be a small snack of ciabatta & olive oil, grapes, and a little vino. I decided to go for a bit more to make it a full meal. A little melted cheese (vs. oil) & red wine-thyme onion jam for the bread, some nuts, olives, Honey-Balsamic Turkish-Spiced Chickpeas, beet-pickled egg, and giardiniera. The egg and giardiniera were quickles, as I hadn’t really planned on having them. I subbed skim milk with just a little bit of olive oil for the whole-y (holy?) ciabatta. It was fab!
The Seafood Lasagna recipe I posted turned into 2 dishes:

Filling was salmon, crab, arugula (I had some to use up), homemade non-fat ricotta, homemade non-fat Greek-style yogurt, parm, garlic, onion, s&p. I also added a little beaten egg to the lasagna roll filling. Just a little bit of parm and the creaminess of the yogurt added a richness to the ricotta. The rolls are great for the freezer to pop out for a quick meal. I made the ravioli with my milled hard red wheat berries, vital wheat gluten, egg, egg yolk, and water. White sauce with skim milk, olive oil roux, white wine, parm, and roasted garlic. Finished with pistachios. I whipped up some fresh butter in the food processor (my indulgence) for the bread. It takes 5-10 minutes or so, depending on your processor. I was inspired by the Rosemary Lemonade here for the strawberry-basil lemonade. Sweetened with the Berhi date syrup and stevia.

I had some toasted quinoa & kept craving carrots, so I made this Grilled Carrot & Walnut Salad with Carrot Top Pesto (a few times, once with rice) — yums!:

For a special occasion, I told you that I made the ciabatta, but I also finally made this Turkish-Inspired Pistachio & Cardamom Cake with Pomegranate Cream Filling (posted way back when):

…it’s a mini version. This was actually only a 1/5 of the recipe, and guess what it was baked in? A parchment-lined soup tin! I made this a couple of weeks ago, sliced it, wrapped it well, and stuck it in the freezer. So, all that was left was the icing. I love these rustic cakes, let me tell ya. During the pastry portion of culinary school (way, way back in the day), cake decorating, pulling sugar, etc., was clearly not my thing. I stuck to cakes from a box, lol. I got up the nerve to try this cake, though, and I’m so glad I did! I sliced a piece from the top before freezing, and it was so moist. I made substitutions of homemade non-fat Greek-style yogurt for butter, and a mixture of coconut sugar and the Berhi date syrup for demerara. As I can’t have too much cream or butter, I went with a snow peak frosting: whipped egg whites, Mexican vanilla, honey, and stevia. This was lovely, and it made me confront my cake fears, haha! This is a wheat-free cake, so please check it out if you have an intolerance.

— As there was a weather prediction of possible 50’s-60’s temps  (early morning) this week, I went ahead and made my ruana. The weather was back to the 90’s before you knew it, though. So super simple, so I am probably going to make another one.The ruana featured in that post has several different styles, including a belted option. — After writing about Chico’s wrinkle-resistant travel-knit fabric last My Way post, I decided to check out their website. They have a 40% off sale (entire purchase) going on right now. I don’t know how long it will last, though (hopefully, at least through tomorrow if you get a chance to read this by then!). If you are a commuter or globe-trotter, the Travelers collection can be a nice addition to your wardrobe. It’s wonderful to arrive at your destination without looking like you slept in your clothes, lol! When I managed the non-profit women’s business clothing boutique (I wrote about it here), Chico’s sister store, Soma, held a bra drive for us. There must have been 500 good condition, quality bras donated. You don’t know what gifts like that mean to those in need! Or, maybe you do. Ah…I get emotional just thinking about it!

Adventures in Food: 2-for-1 tomato-based soups! I made a slow-cooker tomato soup base for the Cherokee Hominy and Tomato Soup (from the last My Way Post) and a Lasagna Soup (I originally saw on the Fave Healthy Recipes site).

I took the Lasagna Soup post’s advice and added some veggies: mushrooms, squash, and kale. I used quinoa macaroni (really a quinoa/corn blend). I LOVE whole wheat pasta, but I will say (again) that I really cannot tell the difference. I lighted up the cheese, but just a little hit of parm makes this so good. Simple, good eats.

The chicken recipe called for the veggies to go into the sauce while cooking, but I just added them after plating. I marinated the tomatoes in a light vinaigrette. I think the sauce would be fab (with the cream or with yogurt) with a number of proteins or even veggies.

The tomato sauce prep had the same ingredients as these roasted tomatoes, but I prepared it on the stove top (and added mushrooms). Again, I know the look of the withered tomatoes isn’t that great (I added a little fresh for garnish), but this was delish! You know flour pasta is my fave, but this was so satisfying. I could eat this every day. The grilling also adds a nice depth of flavor.

I need to do another To Market to Market… post soon! I spotted berhi dates, durum wheat, and pickled mango powder at Jasmine Market here in Tucson. What else should we pickle and powder…hmmm? One of the store staff told me there are like 1000 types of dates (don’t know if that’s an exaggeration???) and some knowledgable folks can point out each variety. When the dates got nice and ripe, I puréed most of them to use as a sweetener. But, they were SO GOOD just by themselves. Nature’s candy. I used the dates to sweeten a greek yogurt brûlée (along with brown coconut palm sugar). (Please forgive the really bad pic in the dark, but I figure you know what brûlée looks like 😉 .)

I wanted creme brûlée, but I thought my body would like the homemade non-fat Greek-style yogurt better. I figured someone must have a yogurt recipe, but I didn’t feel like looking one up. I just used my old creme recipe with a yogurt substitution. Flavoring was Mexican vanilla extract (I like the earthiness of it) and a touch of rum. This was delightful and satisfied my craving. Pure Mexican vanilla can sometimes be difficult to find, but mine came from Penzeys Spices. You can get a huge bottle, too (16 fl. oz.), if you like.

Finally, if you are a bread lover, try this Caramelized Onion and Olive Focaccia recipe I posted a while back:

I used capers in place of olives this time. I caramelized my onions with a little balsamic, red wine, and thyme. I threw some red peppers flakes on the dough afterwards.. I did not use as much oil as the recipe called for, but I was still really, really pleased with the results. I only used a 1/2 teaspoon in the dough, with non-fat yogurt making up the difference. And, I just gave it a few Misto’s of oil to finish. Now, don’t start frowning at me! I will try it with all of the oil some day. Many times, I try to cut calories of liquid fats where I can (like I said I do with vinaigrettes and pestos). It’s just a personal preference. If I’m going to consume the cals, I would rather chew them (like nuts or avocados, say). My mind (not just my tummy) seems more satisfied this way, lol. Though, I do love to dunk bread in a good bit of olive oil every now and then! I guess the liquid vs. solid applies to other areas of food in my life as well. Anyway…this bread was so luscious and luxurious (even without the full amount of oil). I would be hard pressed to choose between it and a candy bar. I would eventually choose the candy bar, of course, but it would be a hard decision 🙂 . Haha

— Great article on the Duchess of Cambridge’s visit to a children’s mental health organization. The article also notes her fashion choices. My former co-worker (a fashionista, for sure) told me she loves to use the Duchess’ style as inspiration ‘pins.’ I think many of my friends, as Americans, are fascinated with royalty. I cannot say that I’ve been unaffected. Princess Diana was the only person who ever persuaded me (through admiration) to willingly cut my hair short.

Delish Treats for the Day:

I made a sourdough sprouted durum wheat bread based on this recipe, but I also wanted to share this stencil technique with you from the same blog: Sourdough Rye with Walnuts | hungryshots.com.
She fashioned the stencil herself, and you can surely do the same (if you’re the crafty type). I only had an Eiffel stencil when I decided to do this, and I didn’t want to purchase another one. I am not good at creating such things from scratch…so, I went with that. It turned out OK, so I will be investing in a few more stencils in the future. Fab for folks lacking that type of artistic talent! Here’s a pic (I didn’t make any slashes on the bread because I didn’t know how the image would turn out. Next time.):

— I had a fab indulgence last week with the Fugazetta (Argentine Pizza) recipe. So tasty! The recipe calls for gobs and gobs of cheese, though, which I cannot have. I probably used less than a fourth of what it called for, but it was still quite delightful. I compromised with myself by tossing on a part-skim mozz vs. provolone. If I have dairy with any fat, I just have to limit my portions. Instead of a sheet pan, I made the Fugazetta in a 11.5 inch cast iron pan. My crust was probably a little thicker, but I absolutely loved it. It was pillowy-soft throughout and crispy on the bottom. I pushed the dough around the edges to make an even thicker crust around the rim. It reminded me of a thick-crust pizza from a restaurant in Texas. Even if it’s not my traditional NY-style, this familiarity brought me comfort. I just wished I had one of those neat-o Scizzas to cut it with! I had to make do with my boring pizza wheel. The instructions said to put the pan on the bottom rack to bake, but I was scared it would brown too quickly. My oven temp varies in different parts, so I thought it best to put it on the top rack. I let it go for 10 minutes, then gave it a hit under the broiler. I made a honey-whole wheat dough adapted from the original recipe. Toppings are just cheese (provolone or mozz), caramelized onions, green olives, oregano, and red pepper flakes, so it’s easy peasy. I added a bit of smoked salt (as I did when I made the sriracha-garlic knots) to give it a “brick-oven” appeal. I’m almost mad I found this recipe! You forget how much you love pizza until you have pizza again.

Most of the time, I use my food processor when making bread doughs. I find it to be fairly quick and easy. You just need to make sure your processor is big enough to handle the volume of dough you are making (and that you have a strong motor). Many of the recipes I come across are for stand mixers (or hand mixing/kneading), so I usually use this simple food processor method (for non-sourdough breads) instead:
1) In a warm area (usually the top of my stove while it’s warming up) add sweetener (honey, molasses, etc.) and warm water (whatever temp range is indicated on yeast packaging) to a bowl, stir until sweetener is dissolved; stir in yeast until dissolved and let the yeast activate. Mixture should be bubbly and foaming after several minutes (sometimes, recipes will indicate an allotted activation time). *You can stir all 3 at once, I just find it’s easier for me to get the sticky honey, etc. from the bottom of the bowl when I can see it a bit better (without the yeast).*
2) While the yeast is activating, in the food processor bowl fitted with the metal blade, add flour, vital wheat gluten or xanthan gum (if using), salt, and any other dry ingredients that are OK to be broken up into smaller pieces. (If I have ingredients I want to remain whole — perhaps raisins, nuts, candied peel, etc. — I will incorporate them after the wet ingredients have been added.) Pulse the dry ingredients for a bit (maybe a minute or less) until they are well combined.
3) When the yeast has activated, stir in any other liquid ingredients (eggs, oil, etc.).
4) Add the liquid ingredients to the food processor bowl, and pulse until the dough starts to come together. Some directions might tell you to slowly add the liquid through the chute, but I’ve never had a problem just putting it all in at the beginning. I want to see a recipe one day that says, “Do this fast, as fast as you possibly can!” lol. 😀 The dough will pull away from the sides, and I usually let it go for a bit longer (just to make sure the gluten is well developed). If the dough is too sticky, I add a little flour. Too dry, a little water.
5) If I’m adding any of those dry ingredients I mentioned in step 2, I add them at this stage. I may coat them with a little flour first, to keep them from sticking and/or bleeding. I tip the dough into a bowl, then incorporate them by hand. Otherwise, I just proceed to tip the dough into an oiled bowl, form it into a ball, Misto a little oil on top, and cover the bowl. I then follow the recipe instructions concerning rest periods, rise time(s), and shaping the dough.

This is the method I’ve used for years and years, and I’ve always been pleased with the results. Online, I found you can sub xanthan gum if you run out of vital wheat gluten (useful for doughs made without white flour). From what I’ve been reading, you should use 1/2 – 1 teaspoon of xanthan gum per 1 cup of flour (vs. 1 tablespoon of vital wheat gluten).

— Speaking of food processors, I am on the lookout for a new one soon. I have investigated several models, but haven’t completely made up my mind yet. I like this Cuisanart Elite 12-Cup model with a 1000-Watt Peak Motor | Cuisanart.com.

I’ve had good experiences with Cuisanart products in the past, so they were one of the first brands I scoped. A good processor (with a powerful motor) is an investment, for sure, but it’s a piece of equipment I use multiple times during the week. A quality processor will last for years and years. This one has a smaller work bowl, as well, so you get 2 for 1.

— The 2-Minute Green Spaghetti Sauce from the last ‘My Way’ post saved me quite a bit of time last week. I made batches of my standard ‘red’ the previous few weekends, so a change was in order. Totally simple, but I added a few things like garlic, chives, & hot pepper sauce. You just whizz it right up in the blender. I chose the option of nutritional yeast vs. parm & replaced the milk with the hot pasta water (my milk was frozen!). A couple of times, I added a bit of tinned salmon and finished with ground almonds — a quick and fab meal! I made another batch this past weekend. Make sure to check out the recipe if you get a minute.

— I am making another folding side table, this time a much easier version. I just spray painted the base of an old, beat up table, then staple gunned a DIY waterproof fabric to the top. I found a tip on another site: if your wax is a little white and streaky (from cooling) when applying the oil & wax mixture, use a blowdryer on the fabric for a bit. I tried this, and it worked beautifully. I have updated my How to Waterproof Fabric post with this tip.

— OK, so those are just temp pieces of furniture, not meant to stay up for any length of time — just a quick fold out, then up. But, I am trying to rethink a space to permanently store a few items. — I was extremely busy this past week and could not find the time to blog. So, I will try to let you know some of the things I’ve been up to. But, before we get into all of that, I wanted to express my deepest appreciation to the late Martin Luther King, Jr. and his family. I, like so many others, would have never had the opportunities that have come my way without them. I believe MLK’s legacy has been felt across all of the nations. So, today, we honor that legacy. It encourages one to stand up for what one believes in. Common men and women have sometimes had as great an impact on society as royalty and world leaders (if not greater, in some instances, perhaps).

— You know I love food and often write up all sorts of food-related tidbits on this blog. On this MLK, Jr. Day, I thought it would be cool to showcase a few chefs and recipes from the US and Britain (as you know, I adore British culture & food). Speaking of Britain, have you ever seen the television show Chef? I do not recall when it ran because many times we (the US) receive British programming much later than the original air dates. Perhaps it was from the 90’s…it was such a fab and funny show. I’m sure it’s in some sort of digital format, so check it out if you get the chance.

— Have you ever been under a time crunch and forced to go to places and do things you would rather not? That’s how last week was for me. Sometimes, my whereabouts/locations can make things difficult. I managed to make the Minimalist Entryway Organizer I wrote about. Instead of bungee cords and a wood frame, I went for a solid wood plaque and elastic. I attached the elastic with a staple gun and drilled a hole in the back for hanging. Such a practical idea for your keys, glasses, etc.:

Also, I’m making a shelf, so I stained a cedar board (after power sanding) with a mixture of coffee and black tea (as I wrote about in my post on The Many Uses of Food Powders). I used soybean oil for finishing, but I’m sure you could use any fixed drying oil (like linseed, hemp, walnut, or sunflower). Super easy and inexpensive. The lighting wasn’t great, so I do not think the pic (before and after) does it justice. It’s a rich caramel color — turned out beautifully:

These DIY’s were made by the store staff. The ‘button letter’ would be totally fun in a child’s room. Or, if you have a more eclectic decor, you could probably make it work in any setting (possibly changing up the color scheme). First initials for couples would be a neat idea.

— What have I been eating this past week? Well, I made a few more of the Detox Drinks with a repeat of the Grapefruit-Cado. I forgot to mention that anytime the recipes call for juice, I use whole fruit. It was such a busy week that I didn’t get a chance to make granola bars. Luckily, I found some organic store-bought ones that were wickedly reduced in price. SQUEAL DEAL! They saved me! I always like to carry some sort of snack bar with me when I go out (so I don’t grab at the nearest candy protein bar in a vending machine, haha). And, I had a couple for snacks in place of my (of late) usual nuts, figs, oatmeal & honey, or za’atar roasted chickpeas. I’ve found the chickpeas curb my cravings for sweets (as you know, I have a sweet tooth). I did have time to whip up a quick cream of roasted garlic and white asparagus soup (with olive oil roux & skim milk, finished with a little extra-virgin and chiles):

And, the Sicilian Roasted Potatoes I made for Christmas have made an appearance 4 or 5 times now. Perhaps I will take a pic soon. I’ve started using a mix of baby Yukons and sweet potatoes. Really quite delicious. As I had a lot of running around to do, I made a batch of egg sandwich fillers. I reheat them in the oven or on the stove, but I suppose you could use the micro (not too long, they might get rubbery). I just used leftover veggies and cooked them in oval rings to fit my homemade bagels. I start them on the stove top and then give them a hit under the broiler:

1) Spinach, Red Bell, White Asparagus, Garlic 2) Kale, Black Olive, Red Onion 3) Broccoli, Feta, Chile (just a little bit of cheese, and my body seemed to handle it OK) 4) Marinated & Grilled Artichokes, Capers, Tomatoes.
Other than that, I began to have a few heavier meals starting with a yummy hamburger (on a bagel, of course 😉 ) and a side of healthy Brussels and smashed baby Yukons bubble and squeak.

— I was inspired by this Pitaya Breakfast Bowl to purchase dragon fruit for the first time. Wonderful! I consumed some raw and threw the rest in the freezer for smoothies:

— Remember the DIY Silk Scarf Kaftan I posted? Well, here’s a DIY Kimono Cape along the same lines. While running errands for my mom, I saw someone with a gorgeous kimono fabric. Still preparing for Turkey Day sans turkey. I think I am favoring this dish for Christmas instead, though: Delicata Squash and Fall Fruits in a Dessert Wine Sauce.

Delicata squash from my local food Co-op inspired this dessert. I have never used it in a sweet preparation before. What started me on the path was having purchased thick and regular rolled oats. I began thinking about a fruit crumble, afterwards thinking about a savory crumble with the squash. Then, I thought about a sweet crumble with the squash. Ultimately, I didn’t use the oatmeal at all and went for this easy stove-top dessert. Many times, dessert wins out in my life!

I must say, this was one of my favorite dessert experiments. I might change the presentation somewhat (a little more refined, perhaps?), but the flavors came together beautifully.

The Prep: I sprinkled a little salt and brown sugar (coconut palm sugar) on the squash and seared them on both sides. Diced apples were also caramelized with a little brown sugar. I made a sauce from water, brown sugar, raw sugar & stevia, homemade dessert wine (as it’s on the sweeter side), lemon zest, lemon juice, cinnamon, nutmeg, and vanilla. I generally just use whatever sweeteners I have at the time for my dishes (like agave, raw sugar, etc.). For some preps, though, I choose to either purposefully use or avoid sweeteners with flavors that are more pronounced (maple, honey, or molasses, etc.). I thought about maple for this prep, but I decided to go with the more subtle brown palm sugar. I used my homemade wine, as it was handy…but, I can think of several wine shop purchases that would be suitable. So, I will change the title to reflect the appropriate wine when I’ve tested it out.

The Stew: I added the squash, apples, dried figs, and raisins to the sauce and let them stew. The squash and fruit were plated, and I drizzled a little bit more of the reduced sauce over the top. As I’ve previously written, I am fasting from butter right now…otherwise, I would have finished with a little at the end. If I wanted to make it more fancy, I would have spiked it and flambéed. Remember I said I love food and drinks on fire!

The Finish: A sprinkling of roasted nuts and pom seeds and a whip of homemade non-fat yogurt with raw coconut butter, vanilla, and raw sugar & stevia.

Also, just a quick update on veg tamales. Last My Way’ post, I linked to a recipe for vegan tamales, so check it out. I made a couple of batches testing the steam and slow cooker methods from the link. I just switched up my fillings and added a little cumin to the dough (vs. faux beef broth). I probably used less than a quarter of the oil the recipe called for (just regular veg oil), and they turned out fab (in my opinion). Less calories means we can eat more, right 😉 . I was also inspired by another recipe using a black bean chili filling. I used a veggie curry filling for one batch:

and, I used a “breakfast burrito” filling for the other (I told you I was stuck on breakfast burritos 😉 ):

The Veggie Curry: Delicata Squash, Tomato, and Black Bean. Sauce was made from sautéed onion, garlic, and chile, my own curry blend, cinnamon, brown sugar (palm sugar), and apple cider vin. I used the same sauce to top it off with, but added a bit of tomato paste & made it a little sweeter than normal (because I love sweet, as you know).

The “Breakfast Burrito”: Scrambled Eggs, Tomatoes, Mushrooms, Black Beans, Green Bells, and Asparagus. I’m also fasting from cheese, otherwise cheese most assuredly would have been included. Eggs were initially cooked very soft, as to not overcook while the tamale was steaming. Topped with my lacto-fermented salsa.

So many different ingredients and dough combos you can use for tamales. I would like to try some Asian flavors next. I used corn husks to wrap most of the tamales, but decided to test out another method, too. I figured some people reading may not have easy access to corn husks. They are readily available here in the Southwest, but I’m not so sure about other places in the country (or world). I thought making tamales is similar to making sushi, so I used parchment paper and a sushi roll mat to roll a few. I just secured the parchment with a little tape (yes, tape! Like a wrapped package or present). You will not get the texture that the corn husks give the dough, but they cooked up fine. They are also very easy to remove from the paper. If you use the slow cooker method, though, you may want to find a way to put a little water into the pot. The corn husks are soaked in water, so that is enough to provide the steam. Perhaps some slow cookers come with steamer racks like larger electrical roasters? Anyway, I think this is a good makeshift method, and you can probably come up with even more ways. The sushi roll mat may not be absolutely necessary, but it made the rolling very easy. Tamales freeze very well, so it’s nice to make a big batch for when the mood strikes.

Recipe Fusion & Thanksgiving Trial Runs

I saw this recipe for Lentil and Sweet Potato Curry, so I decided to try it out. Then, I saw this scrumptious looking Lentil and Lamb Moussaka. But, I didn’t have any lamb :(. It seems to me that lamb dishes are very common in the UK (where these recipes are from), as beef is in the US. Perhaps not. It may just be the particular recipes I’ve come across. Anyway, this is what happens when recipes collide. I used the curry base with the moussaka top. It’s sort of like shepherd’s pie. I didn’t make it too sauce-y, as I was going to eat it without the addition of rice or bread. I really enjoyed it! The top is made from just Greek-style yogurt and egg. I used my homemade non-fat yogurt and added a little nutmeg. It was the first time I’ve used yogurt instead of a cheese (like ricotta). I am sold! Awesome! For the curry, I added a little apple, garlic, and my own curry spice blend with a touch of cinnamon. The recipe calls for chickpeas, but I roasted all of what I had for snacking (see this post). I had white beans in the freezer, though, so they had to pinch-hit. Sorry, the pics were pretty dark, but here you go:

What to do with lentil leftovers? I decided on a taco. I know this prep doesn’t look that great! But, it was satisfying. I didn’t have any tortillas left, though, so I had to make one. I was starving by the time I made this and almost didn’t take a pic. The tortilla was a soft, foldy one. I just left it open for you to see. Just lentils, potatoes, red cabbage, salsa verde, cilantro, and homemade pickled onions. I just love fresh tortillas! This one was made with whole & heirloom wheat.

I am continuing to seek and test ideas for Thanksgiving. I really think I am going to prepare lighter fare this year. It will save me a lot of prep time (and extra workout hours). Here’s one simple dish I think is a go: Grilled Yukon, Beet, and Sweet Potato Skewers.

I found another use for ginger beer syrup: glaze for the sweet potatoes. I used a thyme, rosemary, and oregano oil for the yukon, and orange juice, zest, olive oil, and mint for the beets (similar to this post). Easy peasy. I basted them half way through and again after they were done. I love the bite of orange zest with beets. So good!

One more idea for Thanksgiving: Coconut Cream-Yogurt Sweet Potato Mousse w/ Ginger Beer Syrup. I don’t think I am going to get away with this, but I still wanted to test it out. I will probably get evil glares if I don’t serve our traditional sweet potato pie, lol. Maybe if I make individual mini-pies, it would help with portion control. Anyway, this was a simple whip of raw coconut cream with homemade yogurt and sweet potatoes, chilled, then topped with ginger beer syrup (another use!), praline, and candied orange zest. If you couldn’t tell, I  adore citrus zest. Maybe I will make this for myself and pie for others…we’ll see.

My Favorite Places: Heirloom Farmers’ Market, Rillito Park, Tucson, AZ, pt. 1

My last trip, I had the best apples — sweet, tangy, bright, and crisp! Having grown up in New York State, I often miss the ‘apple culture’ we had (picking days, fresh juice, cider, cider donuts, etc.)…so these brought back sweet memories. Arizona is obviously a big state for citrus, though, and we have a wonderful selection. There are so many awesome vendors and farmers who attend this market, so please stop by if you’re in Tucson. I especially love the local produce, but you can find fab local tortillas, tamales, soaps, tea, honey, garden plants, and more.

Recipes: Labor Day

Port Wine Sliders with Goat Cheese and Caramelized Onions  

I went back and forth about rounding up Labor Day recipes to post, but I finally made a decision to go for it. I hope everyone reading in the States has a fine, long, relaxing holiday weekend. Best wishes to all others reading as well!

Many of the blogs I have had the chance to read have started to talk about the weather getting cooler and getting ready for the fall season. It is a sunshine-filled 100 degrees today in Tucson, Arizona, USA!!! I just wanted to make you jealous 😉 .

So, onto the fooooood…If calories were not an issue, I would be making ALL of these. There are so many fab dishes to choose from, but I only had time to look at so many. See my earlier post for ‘Red, White, and Blue’ dishes from the 4th of July and food blogs listed on my blogroll to get more great ideas.

Lamb Sliders with Feta, Red Onion, and Cumin Mayo – I love lamb, and this sounds like a delicious alternative to ground beef burgers.

Homemade Pretzel Dogs – I have wanted to make these for a while. This is a Kosher recipe, so it’s doubly good.

Grilled Graffiti Eggplant – I posted this on my previous blog, but I forgot to re-post it on this one. So Good! Eggplant is one of my very favorite things. I recently had it at a restaurant so differently than I am used to…I think it might be my new favorite eggplant dish. More on that another time…

Slow Cooker Saag Aloo – Awesome! You can just throw this in the slow cooker and get to the rest of your food prep.

Cherry and Wild Rice Salad with Mango Vinaigrette – This looks lovely and is perfect for a picnic, but I think it would be just as nice for a formal lunch or dinner.

Cranberry-Lime Coconut Macaroons – You know what I will be doing with some of the fresh coconut I dried. Yum!

Homemade S’mores – If you are already outdoors grilling, might as well throw some marshmallows on the barbie.

Raspberry Cheesecake Ice Cream – No machine needed!

English Garden Cocktail – The gin used in this recipe may only be available in England. I’m not sure. I’m sure you can substitute another fine spirit, though. Also, make sure you read the note about the gin being export strength.

Shirley Temple – A favorite!!! This recipe is a gorgeous version, and I think it would work nicely in a punch bowl or glass pitcher.
